Lentil soup is a traditional Middle Eastern dish and can be prepared in many different ways.
I prefer to make it simple with just a hint of cumin as the lentils are already full of flavor. I used green lentils but you can make it with lentils red, yellow or brown.
This lentil soup is hearty, healthy, vegan, dairy-free and so easy to make.

Healthy Lentil Soup

Ingredients
- ½ medium onion, finely chopped
- ½ clove garlic, finely chopped
- 1 small carrot, finely chopped
- 2 tablespoons extra virgin olive oil
- 150 grams (5.3 ounces) green lentils
- 1 liter (4 cups) hot water
- the juice of half a lemon
- ¼ teaspoon cumin
- ¾ or 1 teaspoon salt (according to your taste)
Instructions
- Wash and drain the lentils.
- Finely chop the carrot, garlic and onion.
- Heat the olive oil in a large pot, add the chopped vegetables and cook until they have softened, about 2-3 minutes
- Add the lentils and mix well.
- Add hot water and simmer for about 20-25 minutes, until the lentils are soft.
- Add salt, cumin, lemon juice and mix well.
- Use an immersion blender to purée the lentil soup.
- Serve with lemon wedges.
